Ingredients (for BB-CEC20):

  • 1-1/2 cups (360mL) milk
  • 3 large eggs, beaten
  • 1 Tbsp. (14mL) apple cider vinegar*
  • 1/8 cup (27g) vegetable oil
  • 2 Tbsp. (40g) honey
  • 2-1/2 cups (370g) brown rice flour
  • 1-1/2 cups (210g) potato starch
  • 1 Tbsp. (8g) xanthan gum
  • 1 tsp. (3g) matcha (powdered green tea)
  • 1 tsp. (5.6g) salt
  • 1 Tbsp. (8.5g) active dry yeast

*If the contents have settled, shake the bottle before using.

  • 1-1/2 cups (360mL) milk

  • 2-1/3 cups (327g) potato starch
  • 1-1/2 cups (222g) brown rice flour
  • 1 Tbsp. (8g) xanthan gum
  • 1 tsp. (3g) matcha (powdered green tea)
  • 1-1/2 tsp. (8.4g) salt
  • 1 Tbsp. (8.5g) active dry yeast

  • 360g (approx. 360mL) milk
  • 150g or 3 large eggs, beaten
  • 15g (1 Tbsp.) apple cider vinegar*
  • 36g (3 Tbsp.) vegetable oil
  • 60g (3 Tbsp.) honey
  • 373g (2-1/3 cups) potato starch
  • 195g (1-1/2 cups) brown rice flour
  • 8g (1 Tbsp.) xanthan gum
  • 2g (1 tsp.) matcha powder (powdered green tea)
  • 7.5g (1-1/2 tsp.) salt
  • 9g (3 tsp.) active dry yeast

In a large bowl, mix the flour ingredients (potato starch, brown rice flour, xanthan gum and powdered green tea) well with a whisk.

Make sure the kneading blades are properly attached, and add the liquid ingredients (milk, beaten eggs, apple cider vinegar, vegetable oil and honey).

Add the flour mixture from step 1 and salt to the baking pan. Make a small indentation in the flour with a spoon, and place the yeast there. Make sure that the yeast does not touch the liquid and salt.

Place the baking pan in the Home Bakery, and set to GLUTEN FREE course for BB-PAC20/PDC20 model or BASIC course for BB-CEC20/BBCC-X20 model.

Set the crust control, and press START. When add beeps sound, use a rubber spatula to push down flour that may be stuck to the side. Please be careful if the kneading blades are moving.

When baking completes, press (and hold) the START/RESET or CANCEL button to turn off the unit. Remove the bread immediately onto a cooling rack.

Allow the bread to cool. Slice and serve.
