Do you know
what the popular rice among Japanese is now? It’s genmai,
or brown rice. Genmai is unpolished whole grain rice that is produced
by removing only the husk and leaving the embryo and bran. Genmai
becomes white rice when the outer bran layer is stripped off in
the milling or "whitening" process, leaving the rice mostly
comprised of carbohydrate. Since the embryo and bran contain large
amounts of nutritional goodies, nowadays many Japanese like to eat
brown rice rather than white rice for their health. Many years ago,
Japanese used to eat genmai as their diet. However, they had changed
to the custom of eating milled rice (white rice) because it is easier
to eat than genmai. Japanese had used genmai for centuries for its
nutritional, health and beauty qualities and these days, they have
been catching on its benefits again. Many Japanese families have
rice-milling machines in their kitchens and cook white, brown or
mixed rice depending on what they feel like eating. Actually, genmai

also very popular among Japanese now. It is a new type of rice that
does not require washing. Present rice milling machines cannot completely
polish away bran and residues from the surface of the rice. For

Japan and this type of rice has been launched in the U.S. market.
This process eliminates the bran and residues from the rice without
