Vegetable Curry and Brown Rice
Ingredients (Serves 4-6) :
2 cups (rice measuring cup) short or medium grain brown rice; 2 Tbsp. butter; 1 medium onion; 2 cloves garlic, chopped; 2 tsp. chopped ginger; ½ lb. ground pork; salt; pepper; 1 zucchini; 1 green (or ½ green and ½ red) bell pepper; 1 medium potato; 4 Tbsp. cornstarch; 2 Tbsp. curry powder; 2 cans (14 oz. each) vegetable broth; 1 bay leaf; 1 Tbsp. ketchup; 1 Tbsp. Worcestershire sauce; 3 Tbsp. milk; ¼ to 1 apple, grated; ¼ cup frozen green peas; cilantro if preferred
