Butter Mochi |

Ingredients (for 2 lb. breadmaker):
3 eggs; 1-1/2 cups milk; 4 Tbsp. butter, melted; 1-1/4 cups sugar; 1-1/2 cups sweet rice flour (Mochiko); 1/2 tsp. baking powder; 1/2 tsp. vanilla; 1 cup sweetened flaked coconut, divided

This recipe was developed for the Home Bakery SupremeŽ Breadmaker (BBCC-X20/BB-CEC20) and the Home Bakery Mini Breadmaker (BB-HAC10). Adjustments may be required for making this recipe in other models of the Home Bakery. |

1. Add ingredients to baking pan in the order listed except for coconut. Select CAKE cycle and press START. (For model BB-HAC10, press START again after first 5 minutes of kneading cycle to continue kneading.) |

2. When mixing (kneading cycle) is complete, sprinkle half of coconut on top of batter. Close lid and resume baking. |

3. During last hour of baking time, add remaining coconut on top of batter. |

4. When baking completes, cool, remove from pan and cut into squares to serve. |
