Butter Mochi
Ingredients (for 2 lb. Home Bakery SupremeŽ breadmaker)
3 eggs; 1 1/2 cups milk; 4 tablespoons butter, melted; 1 1/4 cups sugar; 1 1/2 cups sweet rice flour (Mochiko); 1/2 teaspoon baking powder; 1/2 teaspoon vanilla; 1 cup sweetened flaked coconut, divided

Ingredients (for 1-lb. Home Bakery Mini breadmaker)
1 egg; 3/4 cup milk; 2 tablespoons butter, melted; 2/3 cup sugar; 3/4 cup sweet rice flour (Mochiko); 1/2 teaspoon baking powder; 1/2 teaspoon vanilla; 1/2 cup sweetened flaked coconut, divided
   
1. Add ingredients to baking pan in the order listed except for coconut. Select CAKE cycle and press START. (For model BB-HAC10, press START again after first 5 minutes of kneading cycle to continue kneading.)
2. When mixing (kneading cycle) is complete, sprinkle half of coconut on top of batter. Close lid and resume baking.
3. During last hour of baking time, add remaining coconut on top of batter.
4. When baking completes, cool, remove from pan and cut into squares to serve.
Mochiko
Many grocery stores carry "Mochiko", but it can always be found in any Asian grocery store.
