Irish Potato Pancakes |

Ingredients
Pancake:
½ cup Cooked Mashed Potatoes (About 3 small Potatoes)
¼ cup Cooked Spinach (Chopped & Strained)
¼ cup Grated Onion (Raw, with Juice)
1 Egg (Beaten)
½ cup Flour
½ cup Buttermilk
Salt & Pepper to Taste
Green Sour Cream:
½ cup Sour Cream
Green Food Coloring (add to achieve desired color)
Dill or your favorite Herb (Optional)
Bacon Bits (Optional)

 |
1. Prepare your ingredients. The mashed potatoes and cooked spinach can be prepared right in the Gourmet d’Expert® Electric Skillet (EP-RAC50). |

2. In a bowl, mix mashed potatoes, egg, grated onion and buttermilk. Gradually fold in flour, add spinach and mix well. Salt and pepper to taste. |

3. In a separate bowl, add green food coloring to the sour cream. |

4. Set the temperature on the Gourmet d’Expert® Electric Skillet to 320 degrees Fahrenheit. When the ready indicator turns off, pour the batter. |

5. When both sides are cooked, place pancakes on plates and top with green sour cream. Garnish with your favorite ingredients such as dills or bacon bits. |
