Avocado Shrimp Croissant Sandwich

Ingredients (serves 4): 

  • 4 oz. cream cheese, room temperature 
  • 2 tsp. lemon juice
  • 2 tsp. onion powder
  • 1/4 tsp. salt 
  • 1/8 tsp. ground black pepper 
  • 3 Tbsp. olive oil 
  • 8 medium shrimp, boiled, peeled and deveined
  • 2 ripe avocados, pitted and peeled 
  • 2 Tbsp. fresh dill, chopped 
  • 4 croissants (see recipe here ) 
  • 1 handful baby arugula

In a bowl, place cream cheese, lemon juice, onion powder, salt, black pepper, olive oil and mix well.

Chop shrimp and avocado into bite-sized pieces.

Add shrimp, avocado and dill in the bowl and toss lightly.

Slice open one side of croissants and assemble sandwiches with avocado mixture and arugula.
