Creamy Edamame Soup

*This recipe was developed for 14 oz. and 18 oz. Zojirushi Stainless Steel Food Jars. Adjustments may be required for making this recipe in other Food Jar sizes.  

*Please make sure not to overfill the food jar with ingredients, as ingredients will expand with cooking, and may cause the lid to burst.

Preheat the food jar by pouring boiling water (not included in the ingredients list). Close the lid and allow to preheat.

Cook the soup. In a saucepan large enough to hold two batches of soup, add edamame, onion, broth and bring to a boil. Do not cover with lid. Reduce heat to simmer and cook until edamame starts to soften, about 15 minutes.

While simmering the edamame, make the optional croutons. Heat oil in a frying pan over low heat. Add bread cubes to the pan, tossing every minute to toast the bread, about 5 minutes total. Turn heat off and transfer croutons to a small bowl. Sprinkle dried parsley.

Puree the soup. After the edamame starts to soften, turn heat off. Puree soup with a hand blender or a tabletop blender until smooth. Please be careful of the hot soup. Stir in soy milk and adjust the taste to your preference with salt and pepper. Heat soup until just before boiling and turn heat off.

Discard hot water from the food jar. Fill with prepared soup from step 4 until 1cm below the ridge and close the lid.

Consume the soup within 6 hours. Top with optional croutons before eating.
