Ingredients (makes about 1 pint):
- 1 cup cooked short or medium grain white rice (see here)
- 1 cup milk
- 4 Tbsp. sugar
- 1/2 tsp. vanilla extract
- 1 tsp. lemon zest
- 1 cup heavy cream
- Fruit of your choice (optional)
Using a blender or a food processor, purée the rice, 1/2 cup milk and sugar.
Mix in rest of milk, vanilla extract and lemon zest.
If you have an ice cream maker, add heavy cream to the mixture to make gelato. If you do not own an ice cream maker, follow steps 3-7.
Keep heavy cream aside, freeze mixture from step 2 in a large ice cube tray for more than 3 hours.
After 3 hours, whip heavy cream in a bowl to a soft peak.
Place frozen ice cubes in a food processor or a blender and make a smoothie.
Combine whipped cream and smoothie. Place in a container and freeze for 3 hours or more to your preferred hardness.
Serve with fruit and enjoy!
