Ingredients (serves 4):
- 10 oz. canned tuna
- 3 Tbsp. butter
- 1/2 onion, small dice
- 8 oz. salad style shrimp, small to medium-sized
- 8 mushrooms, sliced
- 1/4 cup bell pepper, small dice
- 3 cups cooked rice (see here)
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 2 Tbsp. curly parsley, minced
Drain tuna and separate into large chunks using a fork.
In a large frying pan, melt butter over medium heat and sauté onion for 2 minutes.
Add shrimp, tuna, mushrooms and bell pepper to the pan and sauté for 1 minute.
Add cooked rice, salt and black pepper, and cook for another minute. Add minced parsley and toss gently to combine. Turn heat off.
Serve immediately. Enjoy!
