But we can\u2019t end the year without discussing the myriad desserts and snacks that are made from rice.<\/p>\n<p>Just like those dishes that use rice in its grain or noodle form, many cultures have used this ancient grain in sweet desserts and savory snacks.<\/p>\n<p>The ever-popular rice cracker is a sophisticated snack when made Japanese-style. There are two types of rice crackers most commonly made: <em>senbei<\/em> and <em>okaki <\/em>(seen in top photo). <em>Senbei<\/em> crackers, which originated in China, are made with Japanese short grain rice called <em>uruchi mai <\/em>and <em>okaki<\/em> are made with sweet, glutinous rice.\u00a0 These rice crackers come in various shapes, including square, rectangular, round and as balls, and they can be made by baking, charcoal grilling or deep frying them. We love making this relatively easy <em>okaki<\/em>-style rice cracker at home, called <span style=\"text-decoration: underline; color: #0000ff;\"><a style=\"color: #0000ff;\" href=\"http:\/\/www.justonecookbook.com\/rice-cracker-recipe\/\"><em>kakimochi<\/em><\/a><\/span>. Try them out and tell us what you think!<\/p>\n<figure id=\"attachment_2394\" aria-describedby=\"caption-attachment-2394\" style=\"width: 800px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-2394 size-full\" src=\"https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2016\/11\/chakli.jpg\" alt=\"chakli\" width=\"800\" height=\"453\" \/><figcaption id=\"caption-attachment-2394\" class=\"wp-caption-text\"><em>Chakli<\/em> (photo by Milindb05)<\/figcaption><\/figure>\n<p>Indian food also has a rich tradition of creating savory rice crackers, one of which is <em>chakli<\/em>. <em>Chakli<\/em> is made using rice flour mixed with gram flour, lots of spices such as turmeric, ajwain, cumin, chili and clarified butter, or ghee. The batter is poured through a <em>chakli<\/em> maker into hot oil, and fried until crispy. Whenever you\u2019re in the mood for a spicy rice snack, try making <span style=\"text-decoration: underline;\"><span style=\"color: #0000ff;\"><em><a style=\"color: #0000ff; text-decoration: underline;\" href=\"http:\/\/www.vegrecipesofindia.com\/chakli-recipe-instant-chakli-recipe\/\">chakli<\/a><\/em><\/span><\/span>.<\/p>\n<p>Desserts made from rice are just as popular as snacks, starting with rice pudding! Rice pudding is made across the globe, from Southeast Asian <em>kheer<\/em> to South American <em>arroz con leche<\/em>. <span style=\"text-decoration: underline;\"><span style=\"color: #0000ff;\"><em><a style=\"color: #0000ff; text-decoration: underline;\" href=\"http:\/\/www.mycolombianrecipes.com\/arroz-con-leche-rice-pudding\">Arroz con Leche Colombiano<\/a><\/em><\/span><\/span> is sweet and redolent of cinnamon. Long-grain rice is cooked in a mixture of milk, condensed milk, water, sugar, vanilla, cinnamon and butter. The final product is cooled until thick and creamy\u2026 just perfect for a holiday occasion.<\/p>\n<figure id=\"attachment_2398\" aria-describedby=\"caption-attachment-2398\" style=\"width: 1024px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-2398 size-full\" src=\"https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2016\/12\/mangostickyrice.jpg\" alt=\"mangostickyrice\" width=\"1024\" height=\"683\" \/><figcaption id=\"caption-attachment-2398\" class=\"wp-caption-text\">Mango sticky rice (photo by <a href=\"https:\/\/www.flickr.com\/people\/97247234@N00\" target=\"_blank\" rel=\"noopener\">Dennis Wong<\/a>)<\/figcaption><\/figure>\n<p>Another well-known rice dessert is <span style=\"text-decoration: underline; color: #0000ff;\"><a style=\"color: #0000ff; text-decoration: underline;\" href=\"http:\/\/www.thaitable.com\/thai\/recipe\/mango-on-sticky-rice\">mango sticky rice<\/a><\/span>, found in many Thai restaurants across the United States and in beach cities across Thailand. Soaked sticky rice is cooked and then simmered in coconut milk, sugar and salt, and topped with peeled Thai mangoes. It\u2019s a refreshing way to end a Thai meal!<\/p>\n<p>Rice desserts can be simple or more colorful and intricate, like the traditional Chinese <em>Ba Bao Fan<\/em> and the Korean <em>gyeongdan<\/em>. <span style=\"text-decoration: underline;\"><span style=\"color: #0000ff;\"><em><a style=\"color: #0000ff; text-decoration: underline;\" href=\"http:\/\/eggwansfoododyssey.com\/2011\/01\/20\/eight-treasure-rice-pudding-chinese-new-year-dish\/\">Ba Bao Fan<\/a><\/em><\/span><\/span> or \u201cEight Treasure Rice Pudding\u201d is a traditional dessert served for Chinese New Year in China. This dessert is made by layering eight \u201ctreasures\u201d or special ingredients such as sugar-glazed fruit or and sweetened beans onto a base of glutinous rice and sugar. It gets its name from the belief that the number eight is a lucky number for Chinese people because of the similarity of the sound of \u201c<em>ba<\/em>\u201d (eight) and \u201c<em>fa<\/em>\u201d which means wealth and prosperity.<\/p>\n<figure id=\"attachment_2395\" aria-describedby=\"caption-attachment-2395\" style=\"width: 800px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-2395 size-full\" src=\"https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2016\/11\/babaofan.jpg\" alt=\"babaofan\" width=\"800\" height=\"531\" \/><figcaption id=\"caption-attachment-2395\" class=\"wp-caption-text\"><em>Ba Bao Fan<\/em> (photo by <a href=\"https:\/\/www.flickr.com\/photos\/u-suke\/\" target=\"_blank\" rel=\"noopener\">kawanet<\/a>)<\/figcaption><\/figure>\n<p><em>Gyeongdan<\/em><\/span><\/span> is a rice cake made using glutinous rice powder and hot water.
