The classic types of <em>onigiri<\/em> are made with plain, high-quality cooked white rice, coated in salt and shaped into balls, cylinders, triangles or molded into cute shapes like kittens and flowers. Sometimes they are wrapped in dried <em>nori<\/em> seaweed and other times they are sprinkled with sesame seeds, ground <em>shiso<\/em> leaf or <em>furikake<\/em>.<\/p>\n<p>Because <em>onigiri <\/em>can be filled with ingredients that would help preserve the rice, typically sour or salty foods, they became popular convenience foods before modern refrigeration. Nowadays, all kinds of tasty ingredients are used to stuff <em>onigiri<\/em>!<\/p>\n<figure id=\"attachment_2515\" aria-describedby=\"caption-attachment-2515\" style=\"width: 640px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-2515 size-full\" src=\"https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2017\/01\/umeboshi.jpg\" width=\"640\" height=\"480\" \/><figcaption id=\"caption-attachment-2515\" class=\"wp-caption-text\"><em>Umeboshi<\/em><\/figcaption><\/figure>\n<p>Common fillings are easy to find in Japan and can be found in Japanese or specialty Asian food markets abroad. <em>Umeboshi<\/em>, or salty pickled Japanese plum, has a strongly sour taste, travels well at room temperature and said to have antibacterial properties.<\/p>\n<p><em>Shiozake<\/em>, or salted salmon, is another quintessentially classic filling for <em>onigiri<\/em>, added flaked and salted to the rice.<\/p>\n<p><em>Okaka<\/em>, or <em>bonito<\/em> flakes moistened with soy sauce, is both salty and sweet, providing a lovely complement for the rice.<\/p>\n<p><em>Tarako<\/em>, or salty cod roe that\u2019s cooked and cut into small pieces, makes a deliciously salty addition to the rice<\/p>\n<p>Finally, <em>kombu no tsukudani<\/em>, or <em>kombu<\/em> seaweed that has been simmered in a soy sauce based liquid until tender and caramelized, is shredded into small strips then rolled into the center of the <em>onigiri<\/em> ball.<\/p>\n<figure id=\"attachment_2516\" aria-describedby=\"caption-attachment-2516\" style=\"width: 640px\" class=\"wp-caption alignright\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-2516 size-full\" src=\"https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2017\/01\/konbunotsukudanionigiri.jpg\" width=\"640\" height=\"360\" \/><figcaption id=\"caption-attachment-2516\" class=\"wp-caption-text\"><em>Mentaiko<\/em>, or salted pollock roe, <em>onigiri<\/em><\/figcaption><\/figure>\n<p>Other popular flavorings include <em>negitoro<\/em>, or finely minced raw tuna mixed with minced green onions, shrimp tempura, pickled <em>takana<\/em> or Japanese mustard leaves, <em>negi miso<\/em>, or a mixture of <em>miso<\/em> paste and Japanese leeks, <em>matsutake<\/em> mushrooms, <em>daikon<\/em> radish leaves and even <em>karaage<\/em> fried chicken, Spam\u00ae and <em>yakiniku, <\/em>or grilled beef.<\/p>\n<p>For our <em>bentos<\/em> this month, we\u2019re going to make filled <em>onigiri<\/em>. Just like unstuffed <em>onigiri<\/em>, start with <em>japonica<\/em> or <em>uruchimai<\/em> variety rice. When cooked properly, this type of rice clings together without getting mushy. Once the rice has cooled to the point where it can be handled, moisten hands with water and rub a pinch of salt into hands. Scoop about \u00bd cup of rice into hands, pressing it into a disc-like shape that conforms to the curve of your palm. Place the filling on the rice and mold the rice around the filling into the desired shape, and wrap with <em>nori<\/em>, if desired. If you are a beginner, you can place a plastic wrap in a small bowl and place the rice and filling on top. Then gather the plastic wrap around the rice and make your desired shape.<\/p>\n<p>We love <em>Shiozake Onigiri<\/em>, made with<span style=\"color: #0000ff;\"> <a style=\"color: #0000ff;\" href=\"http:\/\/www.justonecookbook.com\/how-to-cook-salmon-salted-salmon\/\">home-cooked salmon<\/a><\/span>, and <span style=\"color: #0000ff;\"><a style=\"color: #0000ff;\" href=\"https:\/\/www.zojirushi.com\/app\/recipe\/spam-musubi\">Spam\u00ae\u00a0<em>musubi<\/em><\/a><\/span>, which is a variation of <em>omusubi<\/em> created in Hawaii!<\/p>\n<p>We love <em>onigiri<\/em> for our <em>bentos<\/em> and hope that you\u2019ll share your favorites with us, too.
