We\u2019re continuing our <em>Japanese Bento<\/em> series this month by delving into the history of <em>bento<\/em>, with a few famous combinations that are sure to inspire you!<\/p>\n<p><em>Bento<\/em> are wildly popular in Japan and have recently been enjoying a large following in the United States. <em>Bento<\/em> are packed lunch boxes\u2014filled with a balanced, nutritious and colorful meal\u2014that can be taken to school, work and outdoor leisure activities. <em>Bento<\/em> are thought to have originated in Kyoto sometime between the 6<sup>th<\/sup> and 8<sup>th<\/sup> century as simple packed meals that travelers would take with them on their journeys. Early forms of <em>bento<\/em> were composed of cooked rice that was dried, making it easy to transport and to reconstitute with water when ready to be eaten. Later, <em>o<\/em><em>nigiri<\/em> took the place of the dried rice and became a part of the <em>bento<\/em> and over time, more items and ingredients were added.<\/p>\n<p><em>Bento<\/em> soon became a convenient part of daily Japanese life following its inception. Mothers would send simple <em>bento<\/em> boxes to school with their children for their midday meal. Often these simple meals would include rice with soy sauce-soaked <em>nori<\/em> seaweed (<em>noriben<\/em>) or plain white rice with <em>umeboshi<\/em>, or salted plum, in the center (<em>hinomaru<\/em> <em>bento<\/em>). And workers would take <em>bento<\/em> from home to work for their lunches.<\/p>\n<figure id=\"attachment_2554\" aria-describedby=\"caption-attachment-2554\" style=\"width: 640px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-2554 size-full\" src=\"https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2017\/02\/shidashibento.jpg\" width=\"640\" height=\"428\" \/><figcaption id=\"caption-attachment-2554\" class=\"wp-caption-text\">An example of <em>shidashi bento<\/em><\/figcaption><\/figure>\n<p>In the early 1600s at the beginning of the Edo Period, <em>bento<\/em> culture become more sophisticated and ubiquitous. In Kyoto, restaurateurs created <em>shidashi bento <\/em>which they delivered to diners during lunch, parties and funerals. These <em>bento<\/em> were created following the principles of <em>washoku. <\/em>According to these principles, <em>bento<\/em> were made with fresh, seasonal ingredients, including rice, a main dish of fish, meat or eggs, and numerous side dishes of vegetables, seaweeds and mushrooms, such that the nutritional balance of complex carbohydrates, proteins, vitamins, minerals and fiber provided a complete meal. Often these dishes were seasoned with salt, mirin and sugar to preserve the foods, and herbs, ginger, <em>wasabi<\/em>, and bamboo leaves were added to the boxes to further help to prevent the food from spoiling. The composition of the boxes included the Five Tastes, namely salty, sweet, sour, bitter and <em>umami<\/em>, and the Five Colors, including red, white, green, yellow and black. Finally, <em>bento<\/em> were crafted with an artful eye for arranging the food in an appetizing and decorative three-dimensional presentation.<\/p>\n<p>Simple <em>bento<\/em> were served in bamboo or cedar boxes. Lavish, highly decorated and specialized <em>bento<\/em> boxes also became popular during the Edo period and were used for more elaborate <em>honzen ryori<\/em>, or full course, meals. These <em>bento<\/em> were originally created for leisure activities, like cherry blossom viewing picnics and going to Noh and Kabuki performances at the theater. A special type of <em>bento<\/em>, called <em>makunouchi<\/em> <em>bento<\/em>, or \u201cbetween acts <em>bento<\/em>\u201d, was served during intermission at the theater. These <em>bento<\/em> were hugely popular, as they provided a complete meal of rice with many side dishes including fish, <em>tofu<\/em>, vegetables and pickles, and enhanced the theater-going experience. <em>Makunouchi<\/em> <em>bento<\/em> is still a popular type of <em>bento <\/em>in Japan, and many consider it the progenitor of modern <em>bento<\/em>. Modern <em>bento<\/em> based on the <em>makunouchi<\/em> style usually contain white rice, formed into barrel-shapes and sprinkled with black sesame seeds, dried seaweed or <em>tsukudani<\/em>, a type of small fish boiled in sweetened soy sauce. The rice is accompanied by a variety of side dishes, often based on the \u201cThree Sacred Imperial Treasures\u201d combination which includes broiled fish, a Japanese-style omelet and <em>kamaboko<\/em>, or fish sausage. These items are accompanied by pickled, simmered or seasoned vegetables, fried foods such as <em>tempura<\/em>, and other seasonal items.<\/p>\n<figure id=\"attachment_2555\" aria-describedby=\"caption-attachment-2555\" style=\"width: 800px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\"wp-image-2555 size-full\" src=\"https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2017\/02\/shokadobento.jpg\" width=\"800\" height=\"450\" \/><figcaption id=\"caption-attachment-2555\" class=\"wp-caption-text\"><em>Shokado bento<\/em> (photo by <a href=\"https:\/\/ja.wikipedia.org\/wiki\/%E5%88%A9%E7%94%A8%E8%80%85:663highland\">663highland<\/a>)<\/figcaption><\/figure>\n<p><em>Kaiseki ryori<\/em>, or haute cuisine based on the formal Japanese tea ceremony, also influenced <em>bento <\/em>culture. Many high-end Japanese restaurants now serve a <em>bento<\/em> that includes the courses that would be served in a traditional <em>kaiseki<\/em> meal, including an appetizer, sushi, soup, simmered vegetables, grilled meats and fish, and rice. These meals are often served in beautiful dishes or bowls. At some <em>kaiseki<\/em> restaurants, one can enjoy s<em>hokado<\/em> <em>bento, <\/em>a version of a <em>kaiseki<\/em>-style <em>bento <\/em>originally developed by Teiichi Yuki in 1937. Mr. Yuki is said to have visited the Shokado Tea House in Kyoto Prefecture, where he saw the calligraphy box of Shokado Shojo, who was a famous priest, artist and tea master during the early Edo period. Mr. Yuki was so inspired by Shokado Shojo\u2019s art and the beauty of his tool box that he developed a similar black lacquered box partitioned into four squares to use for <em>shokado<\/em> <em>bento<\/em>. <em>Shokado bento<\/em> were easy to serve during large events, and became popular variations of tea ceremony meals.
