China was a major center for this type of exchange, and the city of Tianjin became a treaty port for interested parties. Many Japanese traveled to Tianjin, establishing a significant population there. With this exchange, Japanese travelers who returned from the city brought back new knowledge, culture, goods, and foods, which became part of day-to-day Japanese life. One such dish was <em>tenshindon<\/em> \u2013 which combines the Japanized word for Tianjin, \u201c<em>tenshin,<\/em>\u201d with the Japanese word for rice, \u201c<em>don<\/em>.\u201d Fumiyoshi Yokota, a professor of Chinese cuisine, researched <em>tenshindon<\/em> in the book titled <em>The Research of Chinese Food Culture: Tianjjin<\/em>, and found that there were strong ties to the food found in Tianjin. First, the use of salty soy sauce was common in Tianjin; <em>Tenshindon also<\/em> features a salty, soy-based gravy. Second, when Chinese people had to eat frugally, they would fish for crabs and prawns off the coast of the port city. <em>Tenshindon<\/em> features a crab omelet. Lastly, rice was popular in both cities. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Along with the\nhistorical connections, legend has it that after the numerous wars of that\nperiod, starving customers would come into a Chinese-owned restaurant called <em>Taishoken<\/em> in Osaka and order the\nquickest, cheapest item they could get \u2013 a Tianjin-inspired crab meat omelet\nserved over rice and topped with a salty sauce. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Competing stories credit\nTokyo as the birthplace of <em>tenshindon<\/em>,\nat the restaurant <em>Rai Rai Ken<\/em>, where\nshoyu-based ramen was popularized, when a customer who was in a hurry to eat\nwas served the dish topped with the sauce used for sweet and sour pork. The\nowner of <em>Rai Rai Ken<\/em> called the dish <em>tenshindon<\/em>, in honor of the Japanese\nsoldiers stationed in Tianjin. \n \n<\/p>\n\n\n\n<figure class=\"wp-block-gallery aligncenter has-nested-images columns-default is-cropped wp-block-gallery-2 is-layout-flex wp-block-gallery-is-layout-flex\">\n<figure class=\"wp-block-image\"><img loading=\"lazy\" decoding=\"async\" width=\"640\" height=\"391\" data-id=\"3990\" src=\"https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2019\/03\/Tenshindon-2-1.jpg\" alt=\"\" class=\"wp-image-3990\" srcset=\"https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2019\/03\/Tenshindon-2-1.jpg 640w, https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2019\/03\/Tenshindon-2-1-300x183.jpg 300w, https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2019\/03\/Tenshindon-2-1-491x300.jpg 491w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/figure>\n<\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">More recently, <em>tenshindon<\/em> has become more popular at\nChinese restaurants in Japan because of the reference to Tenshinhan, a\ncharacter in the hugely popular Dragon Ball <em>anime<\/em>\nseries. \u201c<em>Han,<\/em>\u201d which means rice in\nChinese, is a play on <em>don<\/em>, a\nfood-related pun that Dragon Ball creator Akira Toriyama often adds to his characters\u2019\nnames. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Regardless of how <em>tenshindon<\/em> came to be, it is an ultimately fantastic comfort food and easy to make over white rice.
