It was imported to the country a mere two centuries ago. And not, as\nyou\u2019d assume, by South Asians from India, where curry, or \u201c<em>kari\u201d<\/em>, originated. Indian curry is a blend of fresh spices and\naromatics that are blended into gravies using tomatoes, cow\u2019s milk, coconut\nmilk, and other liquids. Indian curries are generally spicy and hot, full of\nchilis and cumin, coriander, turmeric, ginger and other spices. Families in\nIndia carefully guard their own curry blends and pass them down generation to\ngeneration. During the centuries of the spice trade by the Dutch, Portuguese\nand British, curry transformed into a dry powder that was able to be\ntransported by ship to Southeast Asia and China, the Caribbean and South\nPacific, Africa, Europe and Japan. <\/p>\n\n\n\n<figure class=\"wp-block-image\"><img loading=\"lazy\" decoding=\"async\" width=\"1024\" height=\"683\" src=\"https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2019\/05\/d7cace41ebb559c8e2516b3967abdc8d_m-1024x683.jpg\" alt=\"\" class=\"wp-image-4171\" srcset=\"https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2019\/05\/d7cace41ebb559c8e2516b3967abdc8d_m-1024x683.jpg 1024w, https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2019\/05\/d7cace41ebb559c8e2516b3967abdc8d_m-300x200.jpg 300w, https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2019\/05\/d7cace41ebb559c8e2516b3967abdc8d_m-768x512.jpg 768w, https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2019\/05\/d7cace41ebb559c8e2516b3967abdc8d_m-450x300.jpg 450w, https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2019\/05\/d7cace41ebb559c8e2516b3967abdc8d_m.jpg 1920w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><figcaption><em>Rakkyo<\/em><\/figcaption><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">Because dry curry powder\nwas imported into Japan by the British, it was originally considered a European\nfood! And as it was transported ship-to-ship, sailors were the first ones to\nfully adapt Britishized Indian curry powder to Japanese tastes. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Japanese curry is made\nof many fewer ingredients \u2013 and in a much less complex way \u2013 than Indian curry.\nThe base is made with a roux, or mix of curry powder, chili pepper, garam\nmasala, butter and flour. Often, curry roux can be found in specialty Asian\ngrocery stores. This roux is mixed with water until it reaches the consistency\nof a gravy, and to the gravy are added vegetables, beef, chicken, apples and\nless commonly, seafood. The entire mixture is eaten with cooked Japanese white\nrice and condiments such as <em>fukujinzuke<\/em>,\nor pickled radishes, pickled <em>rakkyo<\/em>,\nor Japanese scallions, or raisins. The spiciness of Japanese curry is quite\nmild compared with Indian and Southeast Asian curries, but hot chili oil can be\nadded to increase the heat. It is considered easy food for dinner, and\none of the first dishes Japanese children learn to make. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">One of our favorite recipes\nis <a href=\"https:\/\/www.zojirushi.com\/app\/recipe\/japanese-beef-curry\"><font color=\"blue\">Japanese Beef\nCurry<\/font><\/a>. Our own secret recipe includes a touch of Worcestershire\nsauce for some savoriness and honey for sweetness.
