We started around the 2nd or 3rd of January for our New Year\u2019s resolution, and for the most part, all of us have been pretty good at sticking to it. We\u2019ve also had some experience with being vegetarian before; we did it for 40 days a couple of years ago, and let me tell you, it\u2019s hard\u2014for a bunch of meat eaters!<\/p>\n<p>How come I did shrimp fajitas, you say? Cuz we\u2019re chill vegetarians, LOL! To be fair, we only got sidetracked about 3 or 4 times the last time we did this, and we didn\u2019t eat meat at all\u2014only fish. So count the fajita as one of our cheatin\u2019 pescatarian days, and keep it a secret, OK?<\/p>\n<p>Obviously, I\u2019m not the cook in our house, but fajitas are so easy anyone can do them. And it helps to have a big cooking surface like our <a href=\"https:\/\/www.zojirushi.com\/app\/product\/eadcc\" target=\"_blank\" rel=\"noopener noreferrer\"><strong><span style=\"color: #0000ff\">Zojirushi Electric Griddle<\/span><\/strong><\/a> where I can do everything at once. The last time I used this, it was for <a href=\"https:\/\/www.zojirushi.com\/blog\/?p=4138\" target=\"_blank\" rel=\"noopener noreferrer\"><span style=\"color: #0000ff\">souffl\u00e9 pancakes<\/span><\/a> and they came out pretty good.<\/p>\n<p>Here\u2019s the ingredients I used. The marinate sauce is store-bought.<br \/>\n<a href=\"https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2020\/02\/ingredients.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-4572\" src=\"https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2020\/02\/ingredients.jpg\" alt=\"\" width=\"900\" height=\"600\" srcset=\"https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2020\/02\/ingredients.jpg 900w, https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2020\/02\/ingredients-300x200.jpg 300w, https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2020\/02\/ingredients-768x512.jpg 768w, https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2020\/02\/ingredients-450x300.jpg 450w\" sizes=\"auto, (max-width: 900px) 100vw, 900px\" \/><\/a><\/p>\n<p>The marinating process. I learned not to keep the shrimp in it too long, because it will start cooking the shrimp; so marinate for only twenty minutes tops. (I didn\u2019t know that! Doesn\u2019t this look beautiful? So healthy too; full of fresh veggies and flavor. I didn\u2019t feel guilty at all, since it was shrimp. Ha! I feel it\u2019s much easier to stay disciplined about eating healthy if you aren\u2019t so strict about it\u2014that\u2019s when it starts to become a chore. It\u2019s also easier staying vegetarian when you cook at home. Eating out is tough after a while, as the choices are limited and it starts to get so expensive.<br \/>\n<a href=\"https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2020\/02\/Fajita-2.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-4576\" src=\"https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2020\/02\/Fajita-2.jpg\" alt=\"\" width=\"900\" height=\"600\" srcset=\"https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2020\/02\/Fajita-2.jpg 900w, https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2020\/02\/Fajita-2-300x200.jpg 300w, https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2020\/02\/Fajita-2-768x512.jpg 768w, https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2020\/02\/Fajita-2-450x300.jpg 450w\" sizes=\"auto, (max-width: 900px) 100vw, 900px\" \/><\/a><\/p>\n<p>But plant-based foods are so popular these days that you can find it everywhere. A recent trend is the meatless hamburger, which is moving into the mainstream from the gourmet vegan restaurants to the fast food industry. Burger King\u00ae and Carl\u2019s Jr.\u00ae have them on their menu, and of course McDonald\u2019s\u00ae will too, soon enough. We had one from an artisanal burger restaurant in Los Angeles called Monty\u2019s\u00ae, which serves a completely vegan hamburger that tasted just like the real thing\u2014honest! Don\u2019t you think it even looks like the real thing? They even use beets to give the \u201cbeef\u201d a pinkish color inside, just like a medium rare hamburger!<br \/>\n<a href=\"https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2020\/02\/plant-burger.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-4577\" src=\"https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2020\/02\/plant-burger.jpg\" alt=\"\" width=\"900\" height=\"600\" srcset=\"https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2020\/02\/plant-burger.jpg 900w, https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2020\/02\/plant-burger-300x200.jpg 300w, https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2020\/02\/plant-burger-768x512.jpg 768w, https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2020\/02\/plant-burger-450x300.jpg 450w\" sizes=\"auto, (max-width: 900px) 100vw, 900px\" \/><\/a><\/p>\n<p>I\u2019m sure we\u2019ll go back to eating meat again eventually, like we did last time. It\u2019s too restrictive, to be honest. But in the meantime, I have to admit I\u2019m feeling \u201clighter\u201d and I think I\u2019ve got a bit more energy. At least I\u2019m hoping I\u2019ll eat less meat after this is done!<\/p>\n<p>Side note: See \u201cGame Changers\u201d on Netflix\u00ae if you get the chance.
