Did you know that out of the 4 main types of Asian rice, the Japonica short grain, commonly known as the sticky rice that we use for sushi, is responsible for only 5 to 6 percent* of the global rice trade? Since I mainly eat this kind, I sometimes forget that there are tens of thousands of other varieties that come from other southeast Asian countries, like Indica, Aromatic and Glutinous rice; not to mention all the African types. It\u2019s the primary staple for more than half of the world\u2019s population, and it\u2019s grown on every continent except Antarctica. Wow.<br \/>\n<em>*source: USDA 2018<\/em><\/p>\n<p>This is my version of Pepper Rice at home using my <a href=\"https:\/\/www.zojirushi.com\/app\/product\/eprac\" target=\"_blank\" rel=\"noopener\"><strong><span style=\"color: #0000ff\">Zojirushi Electric Skillet<\/span><\/strong><\/a>. Have you ever tried this? There is a Japanese chain called Pepper Lunch\u00ae that does this on cast iron skillets and it comes sizzling to your table. I followed a copycat recipe that I found online and replicated it pretty good. The real star here is the electric skillet, that did a really good job of searing the meat and browning the rice to give it that crispy skin. FYI, the temp was set at 400\u00b0F, which was perfect.<\/p>\n<p><iframe loading=\"lazy\" title=\"pepper rice\" width=\"500\" height=\"281\" src=\"https:\/\/www.youtube.com\/embed\/CQHaBBAAm7U?feature=oembed\" frameborder=\"0\" allow=\"accelerometer; autoplay; clipboard-write; encrypted-media; gyroscope; picture-in-picture; web-share\" referrerpolicy=\"strict-origin-when-cross-origin\" allowfullscreen><\/iframe><\/p>\n<p>After you stir it up, it\u2019s done without much trouble at all. If I do this again, I\u2019m adding more corn and more ground pepper. I feel what\u2019s most important is using a good grade of thin sliced sukiyaki meat.<\/p>\n<p>Doesn\u2019t this look good? I added some cheese to this so there\u2019s an additional layer of texture. Eh, I can take that or leave it. But the seared bits of meat and rice is what made my Pepper Rice extra-extra!<\/p>\n<p><a href=\"https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2021\/08\/Pepperserving.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-5480\" src=\"https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2021\/08\/Pepperserving.jpg\" alt=\"\" width=\"900\" height=\"600\" srcset=\"https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2021\/08\/Pepperserving.jpg 900w, https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2021\/08\/Pepperserving-300x200.jpg 300w, https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2021\/08\/Pepperserving-768x512.jpg 768w, https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2021\/08\/Pepperserving-450x300.jpg 450w\" sizes=\"auto, (max-width: 900px) 100vw, 900px\" \/><\/a><\/p>\n<p>Another rice dish that you can make right in your rice cooker is <em>takikomi gohan<\/em> (mixed rice). If you have a \u201cmixed rice\u201d setting on your rice cooker that\u2019s even better. I mean, they literally sell mixed rice kits at the Asian supermarkets if you\u2019re lucky enough to live near one, so all you do is wash rice, add the broth and ingredients from the kit into the pot, and push the button! This one was made using Japanese salmon fillets, fresh mushrooms and a broth recipe from a soy sauce company.<\/p>\n<p><a href=\"https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2021\/08\/takikomi-1.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-5481\" src=\"https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2021\/08\/takikomi-1.jpg\" alt=\"\" width=\"900\" height=\"600\" srcset=\"https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2021\/08\/takikomi-1.jpg 900w, https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2021\/08\/takikomi-1-300x200.jpg 300w, https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2021\/08\/takikomi-1-768x512.jpg 768w, https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2021\/08\/takikomi-1-450x300.jpg 450w\" sizes=\"auto, (max-width: 900px) 100vw, 900px\" \/><\/a><\/p>\n<p>I love salmon so I can appreciate it when I\u2019ve got big chunks of it in my rice and not just little bits. It\u2019s a pretty foolproof dish as long as you\u2019re using a good rice cooker.<\/p>\n<p>Hopefully this got you in the mood for rice. TBH, if it\u2019s between National Bread Month and National Rice Month, I\u2019m choosing rice every time.
