Can a rice cooker bring out <em>umami<\/em> in rice? I wanted to know more, yes I did, so I took the <a href=\"https:\/\/www.zojirushi.com\/app\/product\/nlgac\"><span style=\"color: #0000ff;\"><strong>Zojirushi NL-GAC10\/18<\/strong><\/span><\/a> for a workout and tried not to get overly ambitious while testing some of its features. Our family cooker is the IH (induction heating) model so it\u2019s in a higher price range, but I was surprised to see how well this cooker did, especially with that <em>umami<\/em> setting.<\/p>\n<p>Bear in mind the <em>umami<\/em> setting takes over an hour to cook rice, so time your dinner accordingly. Believe me, it\u2019ll be worth the wait. I was using the bigger 10-cup version, so the first thing I wanted to try was the minimum amount of rice. Can it still cook rice perfectly with only 2 cups? Yes it did, and it did it well.<br \/>\n<a href=\"https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2021\/11\/umami-2-cups.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-5585 size-full\" src=\"https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2021\/11\/umami-2-cups.jpg\" alt=\"\" width=\"900\" height=\"600\" srcset=\"https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2021\/11\/umami-2-cups.jpg 900w, https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2021\/11\/umami-2-cups-300x200.jpg 300w, https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2021\/11\/umami-2-cups-768x512.jpg 768w, https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2021\/11\/umami-2-cups-450x300.jpg 450w\" sizes=\"auto, (max-width: 900px) 100vw, 900px\" \/><\/a>The rice really was \u201csweeter\u201d and cooked with perfect texture through each grain. Not soft-mushy, not hard with too much bite, but firm and still fluffy. Umami is hard to describe, but it brought out a certain flavor to the rice that you can taste. If you buy good quality rice, this is the way to cook it!<br \/>\n<a href=\"https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2021\/11\/umami-close-up.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-5584 size-full\" src=\"https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2021\/11\/umami-close-up.jpg\" alt=\"\" width=\"900\" height=\"600\" srcset=\"https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2021\/11\/umami-close-up.jpg 900w, https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2021\/11\/umami-close-up-300x200.jpg 300w, https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2021\/11\/umami-close-up-768x512.jpg 768w, https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2021\/11\/umami-close-up-450x300.jpg 450w\" sizes=\"auto, (max-width: 900px) 100vw, 900px\" \/><\/a><\/p>\n<p>I\u2019m assuming the extra time on this setting is to allow the raw grain to soak up the water longer, and after it\u2019s done, to allow for extra steaming. The other thing I tried was to cook a larger amount of rice (5 cups) to make sure the results were the same. Again, it cooked consistently all the way to the bottom of the cooking pan. If you\u2019re one of those people who believe rice is tasteless and has to be drizzled with soy sauce, try making a tasty entree and eat it with good, plain white rice. Give your taste buds some credit, man.<\/p>\n<p>Another unique feature of this rice cooker is the steam setting and the steaming basket that comes with it. My larger 10-cup was ideal for this because the basket is large enough for almost any meal. It can be used as a \u201cset it and forget it\u201d stand alone steamer, but lazy me\u2014I thought, what\u2019s the point unless I can make rice at the same time? So my genius move was to cook fish using foil, which takes longer and can be steamed on the same timeline as a pot of rice.<\/p>\n<p>My black cod (a meatier thicker fish is better; at least an inch thick) goes into the foil, elevated off the bottom with scallions.<br \/>\n<a href=\"https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2021\/11\/fish-prep.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-5579 size-full\" src=\"https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2021\/11\/fish-prep.jpg\" alt=\"\" width=\"900\" height=\"600\" srcset=\"https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2021\/11\/fish-prep.jpg 900w, https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2021\/11\/fish-prep-300x200.jpg 300w, https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2021\/11\/fish-prep-768x512.jpg 768w, https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2021\/11\/fish-prep-450x300.jpg 450w\" sizes=\"auto, (max-width: 900px) 100vw, 900px\" \/><\/a><\/p>\n<p>Here\u2019s proof I did both at the same time. I made 2 cups of rice on the \u201cQuick\u201d setting, which took about 30 minutes. Better than I thought! I heated it on the stove until boiling and poured it on my fish like a chef. Ha!<br \/>\n<iframe loading=\"lazy\" title=\"Steamed fish!\" width=\"500\" height=\"281\" src=\"https:\/\/www.youtube.com\/embed\/FwJ_kJd4W8Y?feature=oembed\" frameborder=\"0\" allow=\"accelerometer; autoplay; clipboard-write; encrypted-media; gyroscope; picture-in-picture; web-share\" referrerpolicy=\"strict-origin-when-cross-origin\" allowfullscreen><\/iframe><br \/>\n(I think it was supposed to sizzle, but mine was a little lame.)<\/p>\n<p>But it still came out pretty tasty and it was so dang easy! Plus I had the rice already cooked to eat it with\u2014that\u2019s an A+ way to use this rice cooker in my mind.<br \/>\n<a href=\"https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2021\/11\/fish-plated-1.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-5582 size-full\" src=\"https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2021\/11\/fish-plated-1.jpg\" alt=\"\" width=\"900\" height=\"600\" srcset=\"https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2021\/11\/fish-plated-1.jpg 900w, https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2021\/11\/fish-plated-1-300x200.jpg 300w, https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2021\/11\/fish-plated-1-768x512.jpg 768w, https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2021\/11\/fish-plated-1-450x300.jpg 450w\" sizes=\"auto, (max-width: 900px) 100vw, 900px\" \/><\/a><\/p>\n<p>My last test was the Sweet\/Sushi rice setting that I thought sounded interesting. I made a traditional Japanese dessert called <em>ohagi,<\/em> also known as <em>botamochi<\/em> depending on the season. If you live near an Asian market, you might be able to find sweet rice <em>(mochigome)<\/em> and canned <em>adzuki<\/em> bean paste (or you can make it from scratch if you want). Wash the rice good and fill the water to the \u201cSweet\u201d line on the cooking pan; choose the Sweet\/Sushi menu and let the rice cooker do the rest.<\/p>\n<p>Once the <em>mochi<\/em> rice is cooked, you need to mash it up just enough to still see shapes of the rice grains. Prepare some <em>adzuki <\/em>bean paste balls using a cookie dropper and get your <em>kinako<\/em> ready. <em>Kinako<\/em> is finely powdered soy bean flour that you mix with sugar to create Japanese style desserts.<br \/>\n<a href=\"https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2021\/11\/ohagi-prep.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-5590 size-full\" src=\"https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2021\/11\/ohagi-prep.jpg\" alt=\"\" width=\"900\" height=\"600\" srcset=\"https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2021\/11\/ohagi-prep.jpg 900w, https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2021\/11\/ohagi-prep-300x200.jpg 300w, https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2021\/11\/ohagi-prep-768x512.jpg 768w, https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2021\/11\/ohagi-prep-450x300.jpg 450w\" sizes=\"auto, (max-width: 900px) 100vw, 900px\" \/><\/a><\/p>\n<p>Now all you\u2019re doing is molding them into balls with the <em>adzuki<\/em>. If you use plastic wrap it isn\u2019t that hard. For the ones coated with\u00a0<em>adzuki<\/em> on the outside, just get a bit of rice and drop it into the middle and form into balls. The plastic wrap will keep your hands from getting sticky.
