Moms are still honored with flowers like carnations, taken out to dinner, given thoughtful gifts and served breakfast in bed (well, not so much in bed in Japan maybe).<\/p>\n<p>Anyway, I started feeling nostalgic for this particular Japanese dessert called a \u201cHotcake\u201d, so I thought I\u2019d make one to show you a little twist on a Mom\u2019s Day breakfast. In Japan, hotcakes aren\u2019t really a breakfast food like pancakes are, even though it might look just like a pancake. Hotcakes are literally more like cakes and have that cakey texture. They are sweeter so you need less toppings, and to me it rises a little taller than pancakes.<\/p>\n<p><a href=\"https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2025\/04\/hotcakes-on-pan-copy-scaled.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-9586\" src=\"https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2025\/04\/hotcakes-on-pan-copy-300x200.jpg\" alt=\"hotcakes on griddle\" width=\"900\" height=\"600\" srcset=\"https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2025\/04\/hotcakes-on-pan-copy-300x200.jpg 300w, https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2025\/04\/hotcakes-on-pan-copy-1024x683.jpg 1024w, https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2025\/04\/hotcakes-on-pan-copy-768x512.jpg 768w, https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2025\/04\/hotcakes-on-pan-copy-1536x1024.jpg 1536w, https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2025\/04\/hotcakes-on-pan-copy-2048x1365.jpg 2048w\" sizes=\"auto, (max-width: 900px) 100vw, 900px\" \/><\/a><\/p>\n<p>You don\u2019t have to make these from scratch\u2014you can find hotcake mixes at any Japanese supermarket if you want to try these. They\u2019re a bit old fashioned and have lost a lot of luster compared to the tall, fluffy souffl\u00e9 type pancakes, or the gastronomically flamboyant, dressed up pancakes that you see today. But I\u2019m not sure they\u2019ll ever go extinct. Hotcakes were a staple at Japanese coffee shops, and as you know&#8211;what goes around always comes back around.<\/p>\n<p><a href=\"https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2025\/04\/hotcakes-main2-copy.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-9588\" src=\"https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2025\/04\/hotcakes-main2-copy-300x200.jpg\" alt=\"hotcakes on plate\" width=\"900\" height=\"600\" srcset=\"https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2025\/04\/hotcakes-main2-copy-300x200.jpg 300w, https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2025\/04\/hotcakes-main2-copy-1024x683.jpg 1024w, https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2025\/04\/hotcakes-main2-copy-768x512.jpg 768w, https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2025\/04\/hotcakes-main2-copy-1536x1024.jpg 1536w, https:\/\/www.zojirushi.com\/blog\/wp-content\/uploads\/2025\/04\/hotcakes-main2-copy.jpg 1957w\" sizes=\"auto, (max-width: 900px) 100vw, 900px\" \/><\/a><\/p>\n<p>How about something healthier for Mom?<\/p>\n<p><strong>Buddha Bowl<\/strong><\/p>\n<p>I guess at one time when these became trendy, someone decided that the overstuffed mound of nutritious ingredients was like a Buddha\u2019s belly and decided to call it that. Or they thought the simpleness and purity of the ingredients was so Zen. Whatever!! Catchy phrases tend to spread quickly, and they become what everyone can latch on to. It\u2019s popular in Japan and Korea because it\u2019s easier to eat for children and is known to have a higher nutritional value. It did really well by the way, which is where this Buddha Bowl came from. But wait, there\u2019s more!<\/p>\n<p><strong>Brown Rice<\/strong><\/p>\n<p>Here\u2019s the ultimate \u201cbalanced meal\u201d for your Mom living her best life\u2014Spam\u00ae and Portuguese sausage served with brown rice so she can feel less guilty. LOL. To test it I made a local Hawaiian favorite called the Sushi Bake. It\u2019s basically a deconstructed California Roll baked in the oven with Japanese mayo and sriracha sauce. You can guess how this is going to taste, right? The best thing about making sushi rice in your cooker is that the rice isn\u2019t soggy or mushy when it\u2019s done right. And there\u2019s something really homey about it that you don\u2019t <u>want<\/u> to see in a restaurant, you know what I mean?
