These recipes all use fresh pasta which can be made easily by using the Home Made or Cookie/Pasta Dough setting on our Zojirushi Breadmakers. You may need to make some slight adjustments if you use a different model or another brand of bread machine.

RAVIOLI is a dumpling type of pasta, shaped like little pillows stuffed with all kinds of ingredients. Although usually square shaped, ravioli can also be circular, semi-circular (mezzelune) or ring-shaped like tortellini. In Italian households ravioli is traditionally made at home and filled with regional meats, seafoods, vegetables and cheeses. After boiling, the pasta creation is served with a rich tomato sauce, or in some regions of Italy, baked in a cream sauce.
In the U.S., we associate ravioli with meat, spinach and ricotta, but there are many vegetarian versions in Italy filled with seasonal squash or mushrooms, some spiced with nutmeg and cinnamon. Many port towns use seafood in their ravioli, often served with delicate lemon sauces that help to highlight the flavor of the fish. By the way, the word "ravioli" is derived from an Italian word meaning "to stuff".
CANNELLONI means "big pipes" in Italian, and it really is like a pasta pipe, or tube, closed on one end and filled with meats, vegetables and cheeses. The ingredients used to fill cannelloni range from ground beef, ground turkey, spinach, and basil. Cannelloni is usually served with a topping of tomato sauce or a white sauce.
Purists will tell you not to confuse cannelloni with MANICOTTI, a similar pasta dish slightly different in filling and size. While cannelloni is about 1-inch in diameter and 3 to 4 inches long, manicotti is much wider--sometimes 2-inches in diameter. Cannelloni is usually stuffed with various meats like ground pork, veal or beef; manicotti uses cheeses like ricotta and mozzarella. Both are covered in a sauce of choice and baked.
Because these pasta dishes are relatively simple and make excellent presentations when they come out of the oven, cannelloni and manicotti are banquet favorites--party dishes that always appear at weddings, New Year's celebrations and at family reunions.
LASAGNA has always been the perfect "pot luck" contribution at parties because it's an easy dish to make for a large number of people. Whereas we Americans are familiar with the crinkled, wavy pasta sheets that make up the layers of our lasagna, Italians prefer the flat pasta. Lasagna layers are usually alternate fillings of pasta and sauces, meats and cheeses, baked together into a kind of noodle pie. There are hundreds of lasagna recipes throughout the world, containing ingredients that range from spinach, eggplant and olives, to cheeses like mozzarella, ricotta and Parmesan.
It may interest you to know that "lasagna" is a word that the Italians derived from the Greek word "lasanon", which actually means "chamber pot". Whoa! Now where did that connection come from? The ancient Romans borrowed the word to refer to cooking pots that were of similar shape to the royal chamber pots, and thus a new word was born. Not the most flattering of word histories, but the next time you bring lasagna to your next party, it'll be useful as a conversation starter.

This mode heats the water directly to the selected keep warm temperature without reaching a boil. The water will reach the selected keep warm temperature quicker than regular mode. Other benefits include reduced steam and reduced energy use. This mode should be used when dechlorination is not necessary, such as when using bottled or purified water.
