We're not trying to worry our readers, but did you know that nearly 26 million children and adults in America have diabetes? And another 79 million have what is called pre-diabetes and are at risk for developing type 2 diabetes, according to the American Diabetes Association. So what do you do if you are diabetic or have been told by your doctor to watch what you eat?

Not to worry--it simply means to eat better, and that doesn't mean eating bland. This month we've got some recipes to create that balanced meal that we know you'll like, and the menu follows the types of foods recommended by the American Diabetes Association.

Start any healthy meal with a healthy salad. These ingredients become more tender when blanched, and don't forget you won't lose any nutritional value by doing so. Quick blanching is easily accomplished if you have hot water at your disposal with a Zojirushi water boiler.

What are the benefits of baking your own bread if you're watching your diet? Probably the most important aspect of doing anything on your own is that you are in control--which means you get to see what goes into what you eat. You can choose the best ingredients, whether it's high grade flour or free range eggs, and you can leave out the trans fats, preservatives or artificial ingredients.

Homemade means you control the sugar content and the sodium content; both of which can be high with commercially prepared breads. Whole grain would really mean whole grain if you use 100% whole wheat flour; you won't need to wonder about what that label is really saying.
