Eggs and Lox Scramble


Ingredients (serves 2):

  • 5 eggs
  • 1 Tbsp. heavy cream
  • 8 chives stalks, cut into 1/2 inch long pieces
  • 1/8 tsp. salt
  • 1/8 tsp. black pepper
  • 1 Tbsp. butter
  • 2.5 oz. smoked salmon lox, cut into bite-sized pieces

In a bowl, whisk eggs, heavy cream, half the amount of chives, salt and pepper.

Melt butter in a frying pan over medium heat and add the egg mixture.

Scramble eggs while cooking.

When the eggs start to settle, add smoked salmon lox, turn heat off and lightly mix to combine.

Sprinkle remaining chives and serve while warm.
