French Onion Tart with Olives and Goat Cheese

Zojirushi Recipe – French Onion Tart with Olives and Goat Cheese

Crispy pie with sweet onion topping. Add a side of green salad for a nice brunch meal or enjoy this dish as an appetizer!

Ingredients (serves 2-3): 

  • 2 small onions, thinly sliced
  • 1/2 tsp. salt
  • 1 Tbsp. butter
  • 1/4 tsp. black pepper
  • 1/2 tsp. fresh thyme leaves
  • 1/2 Tbsp. dry sherry
  • 1 sheet (8.65 oz.)  frozen puff pastry, defrosted
  • 5 green olives, pitted
  • 1 oz. goat cheese, crumbled

Prepare the topping. In a heat resistant bowl, place onion slices and salt, and mix well. Cook in a microwave at 1200w for 2 minutes.

In a sauce pan, melt butter over medium heat. Add pre-cooked onions and pepper. Sauté onions until they are golden and caramelized, about 30 minutes over low-medium heat. Add thyme and sherry, cook for an additional 3 minutes. Set aside to cool.

Line the baking tray of Toaster Oven with aluminum foil.

Place the sheet of puff pastry dough on the prepared baking tray. Fold in the excess dough and press the edge with your fingertips. Prick base of the dough with a fork.

Place the baking tray in the Toaster Oven and set the Temperature Dial to 375ºF. Bake until the pastry starts to rise, about 5 minutes.

Take out the baking tray, spread cooled onions, leaving 1/2" from the edge. Slice olives. Scatter olives and goat cheese over onion. Turn the baking tray 180 degrees (to allow even baking of the pastry dough), and bake for an additional 5 minutes, or until edges are golden.

Serve while warm.
