Squeeze excess moisture from the spinach in a towel or with your hands. Get as much liquid out of the spinach as possible. Discard the water and set aside.
Place the flat plate to the Gourmet d’Expert® Electric Skillet (EP-RAC50) and set to 320°F. Melt the butter, then sauté the onions for 3 minutes.
Add garlic, all-purpose flour, ground mustard, cayenne pepper, ground nutmeg, salt, and sauté for a minute. Gradually add milk, stirring until bubbles. Reduce heat to 280°F.
Add white cheddar cheese and Monterey Jack cheese and stir until melted.
Add spinach from step 1. Cook for 5 minutes, stirring occasionally.
Reduce temperature to KEEP WARM. Top with Monterey Jack cheese, and cover with the lid. Let it sit for 2 minutes or until cheese is melted.
Sprinkle with optional red pepper flakes and serve warm. Enjoy!
