Perfect to bring to any gathering, this cheesy, creamy dip is easy to make and can be kept warm and fresh in the Zojirushi electric skillet. Serve with baguette, tortilla chips or pita bread!

Squeeze excess moisture from the spinach in a paper towel or with your hands. Get as much liquid out of the spinach as possible. Discard water and set aside.
Place the flat plate to the Gourmet d’Expert® Electric Skillet (EP-RAC50) and set to 320°F. Melt the butter, then sauté the onions for 3 minutes.
Add garlic, all purpose flour, ground mustard, cayenne pepper, ground nutmeg, salt, and sauté for a minute. Gradually add milk and stir until bubbling. Reduce heat to 280°F.
Add white cheddar cheese and Monterey Jack cheese and stir until melted.
Add spinach from step 1. Cook for 5 minutes, stirring occasionally.
Reduce temperature to KEEP WARM. Top with Monterey Jack cheese, and cover with lid. Let it sit for 2 minutes or until cheese is melted.
Sprinkle with optional red pepper flakes and serve warm. Enjoy!
