Tropical Fried Rice

Zojirushi Recipe – Tropical Fried Rice

Sautéed garlic, vegetables, ham and shrimp are mixed with jasmine rice, then seasoned with soy sauce, oyster sauce, curry powder and pepper. Pineapple and raisins are added for a tropical flair. Serve in a pineapple bowl for a festive feel!

            	Tropical Fried Rice  Ingredients

Ingredients serving (serves 4-6):
To Cook in the Rice Cooker:

  • 2 cups (rice measuring cup) jasmine rice
  • Water to fill to water level 2 for “JASMINE” or 2-1/2 cups (rice measuring cup)

To Prepare Separately:

  • 2 Tbsp. vegetable oil
  • 1 Tbsp. minced garlic
  • 1/2 medium onion, diced small
  • 1 medium carrot, peeled and diced small
  • 1/2 cup small diced ham
  • 2 cups (approx. 12 oz.) extra-large shrimp, raw, peeled, deveined and tail on
  • 1/2 tsp. salt
  • 1 Tbsp. soy sauce
  • 1 Tbsp. oyster sauce
  • 1/4 tsp. pepper
  • 1 Tbsp. curry powder
  • 1/4 cup raisins
  • 2 cups chopped fresh pineapple
  • 3 stalks green onion, chopped

For Garnish:

  • 1/2 cup chopped cilantro

Measure rice accurately using the plastic measuring cup that came with your Zojirushi rice cooker. Fill rice above the brim, then level off the cup. Now add to the inner cooking pan.

Fill the pan with cold water, rinse rice quickly once and drain. Add water to the corresponding water level for “JASMINE”, or as listed in the ingredients. Make sure the rice is completely submerged and leveled to ensure even cooking.

Cook the rice using the “JASMINE” (if available), or “WHITE RICE” setting.

When rice completes cooking, gently fluff the rice with rice spatula.

Heat a large frying pan over medium-high heat and add vegetable oil. Add garlic and cook until fragrant. Add onion, carrot, and stir fry for 2 minutes. Add ham, shrimp, and cook for 2 additional minutes or until heated through.

Add cooked rice to the pan and gently toss to combine. Add salt, soy sauce, oyster sauce, black pepper, curry powder and toss to coat evenly.

Add raisins, pineapple and toss to combine. Turn heat off and add green onions to finish.

Plate fried rice, top with cilantro and serve while hot. Enjoy!
