Whole wheat bread is made using whole wheat flour. Whole wheat flour, ground from the entire wheat kernel, is heavier, and richer in nutrients. However it contains less gluten, so adding vital wheat gluten, protein found in wheat, enhances the texture of the dough by keeping it moist and sticky. Molasses, a mixture of sugar cane, grapes or sugar beets into sugar, adds a unique sweet flavor to the bread.
